MUNICH, Germany—Higher concentrations of carbon dioxide (CO₂) in the atmosphere, driven by climate change, are significantly altering the protein composition of wheat, according to a new study. The research, led by the Leibniz Institute for Food Systems Biology at the Technical University of Munich, highlights that these changes can affect not only the baking quality of wheat but also the tolerability of wheat products. The findings were published in the journal Food Chemistry.

The study emphasizes that the adaptation of crops to climate change should focus on more than just yield. Future agricultural strategies must also prioritize quality characteristics, such as protein composition, to ensure the nutritional value and usability of wheat.

Different wheat cultivars respond uniquely to increased CO₂ levels, leading to varied impacts on protein content and composition. This variability can influence the gluten content, which is crucial for the baking quality of wheat. The changes in protein composition could also affect the digestibility and allergenic potential of wheat products, making them less tolerable for some consumers.

The research underscores the need for a comprehensive approach to crop adaptation in the face of climate change. While increasing yields is important, maintaining the quality and nutritional value of staple foods like wheat is equally critical.

**Context/Background:** This research is significant because wheat is one of the world's most important staple foods, providing a significant portion of the global population's daily caloric intake and protein. Ensuring its quality and nutritional value is crucial for food security and public health, especially as climate change continues to impact agricultural systems worldwide.
